Description
Agazoon contains Agar-Agar, which is a polysaccharide derived from red algae and seaweed. It forms stiff brittle gels. It has been common in the Far East for hundreds of years, used primarily in desserts. It is a natural product that is said to have a positive effect on the body's cholesterol level. Agazoon is a good vegan alternative to gelatin.

When heated to 80° C, Agazoon will gel upon cooling. Gelling is fast, and by the time the mass has reached 35° C, the gel will set. This makes it an ideal product for creating all kinds of forms. The gel may heat to 85° C without losing its form. Acids reduce Agazoon's gelling properties. Thick sauces with a pudding like consistency are possible by blending set Agazoon gel blocks to a smooth finish. Ingredients: Agar-Agar, Maltodextrin. Common Application: gels, noodles, puddings, faux caviar.

A quick and easy way to make gels. The basic mixture for making gels is 1 Tablespoon Agazoon mixed with 320 ml of liquid. The liquid must be heated above 176 degrees, and will gel as it cools to room temperature.
